carrot and parsnip rösti

carrot and parsnip rösti
serves 4 as a side, or 2 as the main event



2 parsnips, grated
4 carrots, grated
2 tbsp butter or vegetable spread, melted
2 tsp cornflour

1. In a large bowl, pour boiling water over the grated veggies and allow to sit for 10 minutes
2. Drain well and squeeze to remove the excess water
3. Stir through the melted butter, salt and pepper and any flavourings you want
4. Heat a frying pan to a medium heat, with just a tiny bit of oil
5. Form the veg mix into patties and fry for about 10-12 minutes – you can cover them for a bit to get some steam action going to speed up the process
