warm cannellini bean salad



1 red onion

1 courgette

1 red pepper

½ pack halloumi

1 tbsp flour

1 tsp smoked paprika

2 cloves of garlic

1 tsp oregano

1 tin cannellini beans, drained and rinsed

½ lemon

½ bunch fresh parsley

2-3 tbsp olive oil

50g feta



  1. Dice the onion, courgette and red pepper – set aside
  2. Dice the halloumi and toss in flour and smoked paprika to coat
  3. Fry the halloumi on a medium heat until golden. Remove from the pan
  4. Add the onion and a little oil to the pan and fry to 2-3 minutes. Chop and add the garlic
  5. Add the courgette and pepper and some oregano – fry for a further 3-5 minutes
  6. Add the cannellini beans and cook for 5 minutes until heated through
  7. Add the zest and juice of the lemon, chopped parsley and olive oil
  8. Return the halloumi to the pan, mix thoroughly and season well before serving
