courgette and tomato with mint

A light and refreshing summer pasta

serves 2
Courgette and tomato with mint


  • 1 courgette, sliced
  • 2 cloves of garlic, sliced
  • 1 large tomato, roughly chopped
  • 1 tbsp each chopped fresh mint and basil
  • a squeeze of lemon juice


  1. Put 150g of pasta on to cook
  2. Fry the courgette and garlic on a medium heat for 2-3 minutes
  3. Add the tomato and cook until it just starts to break down
  4. Add the cooked, drained pasta
  5. Stir through the mint, basil and lemon juice and season well before serving
