pea and avocado

A delicious creamy sauce – add some more whole peas or blanched cavolo nero for some extra texture

serves 2

Avocado, pea and mint

ingredients

  • ½ cup peas
  • ½ a ripe avocado
  • 50g soft goats’ cheese
  • 1 clove of garlic, minced
  • 1 tbsp olive oil
  • juice of ½ a lemon
  • sprig of mint leaves
  • Parmesan and toasted flaked almonds to serve

method

  1. Put 150g pasta on to cook
  2. Blitz together the peas, avo, cheese, garlic, olive oil, lemon juice and mint in a food processor or stick blender
  3. Stir the sauce through cooked, drained pasta using a little of the pasta water to slacken it if needed
  4. Serve with grated Parmesan and toasted flaked almonds
