semi-dried tomato and olive spaghetti

 

serves 2

ingredients

  • 1 clove of garlic, sliced
  • 1 tbsp semi-dried tomatoes, chopped
  • 1 tbsp olives of your choice, chopped
  • 1 tbsp tomato paste
  • 1 tbsp chopped parsley
  • toasted pine nuts to serve

 method

  1. Put the pasta on to cook – use at least 60-75g of pasta per person
  2. Gently fry the garlic in some oil from the tomatoes
  3. Add the tomatoes and olives, tomato paste and a little pasta water and gently warm through
  4. Add the cooked, drained pasta and parsley, stir and serve with some toasted pinenuts … and a light red wine …
